Japanese Yamitsuki Cabbage: Crunchy, Addictive Side Dish Recipe

Published on

Cabbage often gets overlooked in everyday cooking, yet its crisp texture and vibrant color make it a versatile, affordable ingredient. This simple Japanese-inspired dish, known as yamitsuki—meaning ‘addictive’—transforms ordinary cabbage into a compelling side that pairs perfectly with richer meals.

What Makes This Cabbage Dish Uniquely Japanese?

The key technique involves salting the cabbage to wilt it slightly while preserving its satisfying crunch. Using Chinese leaf cabbage, torn by hand, the leaves are seasoned with a blend of sesame oil, ginger, and garlic. This method tenderizes the frilly greens without making them soggy, resulting in a nutty, flavorful dressing that clings to each piece.

Yamitsuki commonly appears at Japanese pubs as a light counterpoint to heavier dishes. The salting step infuses deep flavor, but rinsing thoroughly prevents over-salting. Even with reduced salt, the result remains bold and balanced.

Preparing the cabbage by hand offers a calming process, though drying it after rinsing requires patience. The effort pays off, especially when served alongside grilled salmon teriyaki and steamed rice, where the crunch cuts through the meal’s richness.

Ingredients

Note: This recipe uses kosher salt for its milder flavor. If substituting with sea salt, reduce to one teaspoon.

  • 1 head Chinese leaf cabbage
  • 2 teaspoons kosher salt (or 1 teaspoon sea salt)
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Method

  1. Tear the Chinese leaf cabbage into bite-sized pieces and place in a large bowl.
  2. Sprinkle with kosher salt and massage gently to wilt the leaves. Let sit for 10-15 minutes.
  3. Rinse the cabbage thoroughly under cold water to remove excess salt, then drain and pat dry with a clean towel.
  4. In a small bowl, whisk together sesame oil, grated ginger, and minced garlic to form the dressing.
  5. Toss the wilted cabbage with the dressing until evenly coated. Serve immediately for maximum crunch.

This quick recipe highlights cabbage’s potential, delivering an addictive crunch that’s hard to resist.
