The method involves a crucial extra step before the potatoes even hit the oven: parboiling, coating in fat, and then freezing. This process is not merely about convenience; it fundamentally alters the potato’s texture. When potatoes are frozen after the initial cooking and coating, their moisture transforms into ice crystals. Upon cooking, these crystals contribute to a fluffier interior and a remarkably crisp outer crust. Analysis of similar techniques indicates that freezing aids moisture release, which disrupts the potato cell structure, leading to improved texture.

When ready to cook, preheat your oven to 180°C (fan). Place the frozen, fat-coated potatoes into the oven for 30 minutes. After this initial period, remove the tray, flip the potatoes, and return them to the oven for an additional 20 minutes at 200°C (fan).
